Caramelised Plum Toast with Almond Butter, Yogurt, and Almonds
Meet your new favourite toast: warm caramelised plums on a thick layer of almond butter, topped with creamy yogurt and crunchy almonds. Every bite is a perfect balance—sweet, nutty, and just a little tangy. It’s rich, dreamy, and the kind of delicious that makes you close your eyes and savour.
Ingredients (Serves 1)
2 slices of whole wheat or dark flour bread
2-3 fresh plums
(use two colours if available, sliced)
1 teaspoon unsalted butter
1-2 tablespoon maple syrup
1 tablespoon almond butter
1-2 tbsp Greek yogurt (or regular yogurt)
A few whole almonds (roughly chopped or halved)
INSTRUCTIONS
Step 1: Toast the Bread
1. Toast the bread: Toast the slices of whole wheat or dark flour bread until golden and crispy. Set aside to cool slightly.
Step 2: Caramelise the plums
1. Prepare the skillet: Heat a non-stick skillet over medium heat and add 1 teaspoon of unsalted butter. Let the butter melt and start to bubble.
2. Add the plums: Place the fresh plums in the skillet. Allow them to cook for 1-2 minutes to soften in the butter.
3. Add the maple syrup: Drizzle 1-2 tablespoons of maple syrup over the plums. Gently stir to coat the plums, letting them caramelise for another 2-3 minutes until glossy and tender. Remove from heat and set aside to cool slightly.
Step 3: Assemble the Toast
1. Spread almond butter: Spread a generous layer of almond butter (about 1 tablespoon) on the toasted bread to create a creamy base.
2. Add caramelised plums: Arrange the caramelised plums on top of the almond butter, alternating colours if using two types for a more vibrant look.
Step 4: Add Yogurt and Garnish
1. Add yogurt: Drop a few dollops of Greek yogurt (1-2 tablespoons) over the plums. Greek yogurt is ideal for its thicker texture, but regular yogurt works too.
2.Sprinkle with almonds: Place a few whole almonds over the toast for added crunch and flavour.
