Crispy Smashed Potatoes on Greek Yogurt with Herb-Chilli Dressing

Golden, crispy smashed potatoes paired with creamy Greek yogurt and a vibrant herb-chilli dressing make for an irresistible dish. Inspired by leftover potatoes from a Swiss cheese fondue night, this recipe turned out to be the perfect way to upgrade them. Not only is it a delicious way to reduce food waste, but it’s also ideal for sharing, serving as a side dish, or savouring solo. Simple yet sophisticated, it’s sure to be a crowd-pleaser!


Ingredients (Serves 3-4)

For the potatoes:

  • 500g baby potatoes

  • 2 tablespoons olive oil

  • Salt and pepper

For the herb-chilli dressing:

  • 3 tablespoons fresh parsley, finely chopped

  • 3 tablespoons fresh dill, finely chopped

  • 2 tablespoons fresh chives, finely chopped

  • Juice of 1 lemon

  • 4-6 tablespoons olive oil

  • 2 small red chilis, finely chopped (adjust for spice level)

  • 1 small onion, finely chopped

  • Salt and pepper

For serving:

  • 200g Greek yogurt (let it sit out for 10–15 minutes to take the chill off)


INSTRUCTIONS

Step 1: Prepare and cook the potatoes

1. Boil the potatoes: If you are not using leftover potatoes, place the baby potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 15–20 minutes.

2. Smash and season: Preheat your oven to 200°C (400°F). Drain the potatoes and transfer them to a baking tray. Use the bottom of a glass to gently smash each potato.

3. Roast until crispy: Drizzle the smashed potatoes with a bit of olive oil and sprinkle with salt and pepper. Roast in the oven for 25–30 minutes, or until golden and crispy.

Step 2: Make the herb-chilli dressing

1. Combine the herbs and onion: In a small bowl, mix the finely chopped parsley, dill, chives and onion.

2. Add flavour: Stir in the lemon juice, olive oil, and chopped chili. Season with salt and pepper to taste. Adjust lemon or chili for balance as desired.

Step 3: Plate and serve

1. Spread the yogurt: Generously spoon the Greek yogurt onto a large serving plate or individual plates, spreading it into a smooth layer.

2. Top with potatoes: Arrange the crispy smashed potatoes on top of the yogurt.

3. Drizzle the dressing: Spoon the herb-chilli dressing over the potatoes, letting some fall onto the yogurt for a beautiful finish.

Serve as a stunning sharing plate, a side dish, or a satisfying snack. Enjoy the balance of creamy, crispy, and herby flavours with every bite!
