Quick Healthy Lemon-Parmesan Orzo Pasta with Green Peas

  • 1 lemon (juice and zest)

  • 100g grated Parmigiano

  • 300g orzo pasta

  • 1 clove garlic, minced

  • 30g parsley, chopped

  • 200g green peas (fresh or frozen)

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • Salt and pepper to taste


INSTRUCTIONS

1. Sauté the Aromatics: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and the zest of 1 lemon. Cook until fragrant, about 1-2 minutes.

2. Cook the Orzo: Add the orzo pasta to the pot. Stir to coat the orzo with the oil and aromatics. Add enough water to cover the orzo. Cover with a lid and cook, stirring occasionally, for about 10 minutes. Add more water as needed to keep the orzo covered.

4. Finish the Dish: Reduce the heat to low. Stir in the lemon juice, butter, and grated Parmesan. Mix well until the cheese and butter are melted and incorporated. Season with salt and pepper to taste.

5. Garnish and Serve: Stir in chopped parsley. Serve immediately with additional grated Parmesan and fresh parsley if desired.
