Savoury Tomato & Goat Cheese Porridge With Pecan Nuts

Ingredients (Serves 2)
60g whole wheat oats - Packed with fiber for excellent digestive health
240ml water - A leaner alternative to milk or stock for a nutritious porridge, making the porridge feel lighter and more easy on your digestion
130g cherry tomatoes - Bursting with vitamin C for a refreshing kick
60g pecan nuts, chopped - An antioxidant-rich source of healthy fats
60g fresh goat cheese - A protein and calcium powerhouse
2 tsp olive oil - A brain-boosting healthy fat for overall well-being

INSTRUCTIONS
1. Prepare the Oats: In a pan, combine whole wheat oats with water and add cherry tomatoes cut in half. Cook over medium heat, stirring occasionally, until the oats reach a creamy consistency. Allow the tomatoes to soften and release their juices, enhancing the savoury flavour.
2. Blend in Goat Cheese: Turn off the heat and gently fold in fresh goat cheese (set one or two teaspoons of the cheese aside for decoration at the end), allowing it to melt and create a creamy texture.
3. Season to Perfection: Sprinkle the porridge with salt and pepper to taste, ensuring a perfectly balanced flavour profile. Divide the savoury tomato and goat cheese porridge into bowls.
4. Add toppings: Top up the porridge with the chopped pecan nuts for a delightful crunch and a dose of healthy fats. In addition to that, drizzle some of your favourite olive oil onto the porridge, enriching it with brain-boosting healthy fats.
