Super Easy & Quick Vegan Bean Tacos

I’m obsessed with the flavours of Mexico and cannot get enough of it! These vibrant tacos are packed with fresh ingredients, bold spices, and zesty lime—bringing that irresistible Mexican taste to your kitchen. Ready in just 15 minutes, they’re perfect for a quick meal that’s light, satisfying, and full of flavour.


Ingredients (6-8 Tacos)

  • 6-8 small soft corn tortillas

  • 200g white beans baked in tomato sauce (canned or homemade)

  • 1-2 ripe avocados, thinly sliced

  • 6 radishes, finely sliced

  • 1-2 limes, juiced and 2-3 wedges for serving

  • A handful of fresh coriander leaves

  • 1 small fresh peperoncino, thinly sliced

  • A handful fresh onion sprouts

  • Hot sauce (like Cholula)

  • Salt & pepper to taste


INSTRUCTIONS

Step 1: Pickle the radish

Finely slice the radishes and place them in a bowl. Squeeze lime juice over them until covered and add some salt, and pepper. Let them marinate while you prepare the other ingredients.

Step 2: Heat the beans

Warm the baked white beans in tomato sauce in a small pan over medium heat.

Step 3: Prep the toppings

Thinly slice the avocado and peperoncino, remove coriander leaves from the stems, and wash the onion sprouts.

Step 4: Warm the tortillas

Heat the corn tortillas in a dry pan for a few seconds on each side until warm and soft.

Step 5: Assemble the Tacos

Place the tortillas on a plate. For each taco, add 2-3 tablespoons of warm beans, then avocado slices. Top with 6-8 slices of pickled radish, a handful of onion sprouts, 2-3 coriander leaves, and a few slices of peperoncino.

Drizzle with fresh lime juice and your favourite hot sauce.

Serve immediately and enjoy! These tacos are fresh, flavourful, and packed with everything I love about Mexican cuisine.
