Warm Butter Bean Salad with Roasted Radishes & Creamy Tahini Sauce

This light yet satisfying spring salad celebrates simple seasonal ingredients. Roasted radishes bring a mellow sweetness, perfectly paired with buttery beans and a smooth, lemony tahini sauce. It's a dish that feels fresh, comforting, and effortless. Great as a light meal or a hearty side – ready in no time!


Ingredients (Serves 2-3)

  • 1 bunch of radishes

  • 1–2 tablespoons avocado oil (or olive oil)

  • 1 can butter beans (washed and drained)

  • A handful of fresh chives, finely chopped

  • 3 tablespoons tahini

  • Juice of 1 lemon

  • 2–3 tablespoons warm water (to thin)

  • 1 tablespoons olive oil

  • Salt & pepper to taste


INSTRUCTIONS

Step 1: Roast the Radishes

Preheat the oven to 200°C. Wash and quarter the radishes. Place them in an ovenproof dish and drizzle with avocado oil. Season with salt and pepper, toss gently, and roast until slightly golden and softened (about 15–20 minutes).

Step 2: Prepare the Sauce

In a small bowl, mix together tahini, lemon juice, olive oil, salt, and pepper. Slowly add warm water while stirring until you reach a creamy, pourable consistency.

Step 3: Assemble the Salad

Rinse and drain the butter beans, then combine them with the warm, roasted radishes. Drizzle the tahini sauce over everything and toss gently to coat.

Step 4: Finish with Chives

Cut in some chives and mix again. Plate the salad and top with a final sprinkle of fresh chives.

Delicious warm or at room temperature, this vibrant spring salad makes a lovely lunch on its own or a colourful addition to your table. Simple, fresh, and full of feel-good energy.
