Baked Feta with Oven Veggies, Quinoa and Lemon-Parsley Vinaigrette

Ingredients (Serves 2-3)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 fennel bulb, cut into thin wedges or sliced
2 zucchinis, sliced into rounds
2x blocks of Feta cheese cut in half
Fresh parsley, chopped
1 lemon (juice & zest)
1 teaspoon paprika
1 teaspoon cumin seeds
1 teaspoon coriander seeds
Salt and pepper to taste
200g multicolour quinoa, cooked
5 tablespoons olive oil
INSTRUCTIONS
1. Preheat Oven: Preheat the oven to 200 °C.
2. Prepare Veggies: In a large mixing bowl, combine sliced red and yellow bell peppers, fennel, and zucchini. In a small bowl, mix 3 tablespoons olive oil with paprika, ground cumin seeds, ground coriander seeds, salt, and pepper. Pour over veggies and mix well.
3. Roast Veggies & Bake Feta: Spread the seasoned vegetables on a baking sheet. Place the block of Feta in the centre of the roasted vegetables. Roast in the preheated oven for 25-30 minutes or until the veggies and feta are slightly caramelised.
4. Prepare Quinoa: While the veggies and Feta are baking, cook multicolour quinoa according to package instructions. Fluff with a fork.
5. Make Lemon-Parsley Vinaigrette: In a small bowl, whisk together lemon juice, lemon zest, chopped fresh parsley, salt, and pepper. Drizzle in 2 tablespoons olive oil while whisking until emulsified.
6. Assemble and Serve: Mix the roasted veggies into the cooked quinoa. Place the baked Feta on top. Drizzle the Lemon Parsley Vinaigrette over the dish. Garnish with additional fresh parsley.
