Meal prep Baked Oats with Blueberries and Cashews
This nourishing and naturally sweet baked oats recipe is perfect for meal prep, giving you a wholesome, energy-packed breakfast for the entire week. Made with softened dates, bananas, oats, and crunchy cashews, it’s a delicious way to start your day—whether enjoyed warm or cold!
Ingredients (Serves 4-6)
2-4 dates, pitted (depending on how sweet you want it)
Hot water (enough to cover the dates)
2 ripe bananas, peeled
125ml milk of choice (cow, almond, oat, etc. - I used oat milk)
1/2 tablespoon liquid coconut oil (melt on low heat if solid)
2 tablespoon flaxseeds
300g wholegrain oats
A handful of cashew nuts
200g blueberries
1 tablespoon cashew butter
Greek yoghurt (optional)
INSTRUCTIONS
Step 1: Soften the Dates
1. Place the pitted dates in a small bowl.
2. Pour hot water over them until fully covered.
3. Let them soak for 10 minutes to soften.
Step 2: Prepare the Banana Base
1. In a large mixing bowl, mash the bananas using a fork until smooth.
2. Once the dates are soft, add them along with the soaking water to the bowl with the mashed bananas.
3. Pour in milk and blend everything using a stick blender (immersion blender) or transfer to a regular blender until smooth.
Step 3: Combine the Ingredients
1. Stir in the flaxseeds, oats, melted coconut oil, and cashew nuts.
2. Mix well to ensure everything is evenly coated.
Step 4: Assemble & Bake
1. Transfer the mixture into a baking dish (oven-safe casserole or square baking pan).
2. Evenly distribute the blueberries on top.
3. Sprinkle with extra cashew nuts and drizzle with cashew butter for decoration.
4. Bake at 180°C (356°F) for 25-30 minutes, or until the top is lightly golden and firm to the touch.
Step 5: Serve & Enjoy
Serve warm or cold, depending on your preference. Enjoy as is or top with Greek yogurt, extra blueberries, and a drizzle of cashew butter for an extra creamy treat!
