Quick & Easy Beluga Lentil Salad For Spring

This quick and easy spring salad comes together in less than 20 minutes, making it a perfect choice for busy days. The crisp radishes add a refreshing kick, while the creamy lemon-tahini dressing brings a rich, well-rounded flavor that ties everything together.

Not only is this salad light yet satisfying, but it's also great for meal prepping—simply store it in the fridge for up to 3 to 5 days. Enjoy it as a refreshing weekday lunch, paired with some crispy sourdough bread for the perfect balance of textures and flavours.


Ingredients (Serves 2-4)

For the Salad:

  • 400g beluga lentils

  • 1l water

  • 1 teaspoon salt (for cooking lentils)

  • 6-8 radishes, quartered and thinly sliced

  • 1 small bunch fresh dill, chopped

  • 100g sunflower seeds

For the Lemon-Tahini Dressing:

  • 2 tablespoons tahini

  • Juice of ½ to 1 lemon (depending on size)

  • Zest of ½ to 1 lemon (depending on size)

  • 1 teaspoon honey

  • 2-3 tablespoon olive oil

  • 2-3 tablespoons hot water (to thin the dressing)

  • Salt & black pepper to taste


INSTRUCTIONS

Step 1: Cook the lentils

1. Rinse the beluga lentils under cold water.

2. In a saucepan, combine lentils with water and salt. Bring to a boil, then reduce heat and simmer for 15 minutes, until tender but not mushy.

3. Drain any excess water and let them cool slightly.

Step 2: Prepare the salad ingredients

1. While the lentils cook, prepare the salad ingredients. Start by quartering and thinly slicing the radishes.

2. Roughly chop the fresh dill.

Step 3: Make the dressing

1. In a small bowl, whisk together tahini, lemon juice, lemon zest, honey, olive oil, salt, and pepper.

2. Gradually add hot water, one tablespoon at a time, whisking until the dressing is smooth and slightly runny.

Step 4: Assemble the salad

1. In a large bowl, combine the cooked lentils, radishes, dill, and sunflower seeds.

2. Drizzle with the lemon-tahini dressing and toss gently.

Step 5: Serve & Enjoy

Garnish with extra dill and a radishes and serve at room temperature.
