Savoury Porridge with Spinach, Egg, Cottage Cheese, and Avocado

This savoury porridge bowl is a nourishing, protein-packed meal that’s warm, comforting, and full of textures and flavours. With creamy oats, spinach, a perfectly cooked egg, and toppings like cottage cheese, avocado, walnuts, and sprouts, it’s the perfect choice for a quick, satisfying lunch or dinner.


Ingredients (Serves 1)

  • 50g wholewheat oats

  • 200ml water

  • 1 handful fresh spinach

  • 1 egg

  • 2 tbsp cottage cheese

  • ½ avocado, diced

  • 1 tbsp chopped walnuts

  • 1 tbsp hemp seeds

  • Handful of mixed sprouts (such as alfalfa or radish)

  • Drizzle of olive oil

  • Salt and pepper, to taste


INSTRUCTIONS

Step 1: Cook the Porridge

1. In a small saucepan, combine the oats and water.

2. Bring to a boil over medium heat, stirring frequently to create a smooth, creamy texture.

Step 2: Add the Spinach

1. Once the oats are cooked, lower the heat and add a handful of spinach to the pan.

2. Stir well until the spinach softens and integrates into the porridge.

Step 3: Cook the Egg

1. Make a small well in the middle of the porridge.

2. Crack the egg into the well.

3. Cover the pan with a lid and cook for 3-5 minutes, or until the egg white is set and the yolk is cooked to your liking.

Step 4: Assemble the Porridge Bowl

1. Transfer the porridge to a bowl, placing the egg on top.

2. Add cottage cheese.

3. Top with diced avocado, chopped walnuts, sprouts, and hemp seeds.

4. Finish with a drizzle of olive oil and season with salt and pepper to taste.
