Buckwheat and Spelt Flour Grissini Recipe

Try this amazing, healthy homemade grissini for your next aperitif, or surprise someone with a thoughtful gift for a housewarming or birthday party. These crispy breadsticks, made with a blend of spelt and buckwheat flour, are packed with flavour and perfect for pairing with cheese, dips, or simply enjoying on their own.


Ingredients (Serves 1)

  • 400 g spelt wholemeal flour

  • 100 g buckwheat flour

  • 10 g yeast

  • 1 dl water (100 ml)

  • 1 tsp salt

  • 1 tbsp fresh oregano leaves

  • ~1.5 dl water (150 ml)

  • Olive oil, for brushing

  • Salt and pepper, for sprinkling


INSTRUCTIONS

Step 1: Prepare the Dough

1. In a large mixing bowl, combine the spelt flour and buckwheat flour. Form a well in the center.

2. Put the yeast into the well and add 1 dl water. Stir gently in the well to create a paste, then sprinkle a small amount of flour from the edges over the mixture.

3. Cover the bowl with a cloth and let it rest at room temperature for 30 minutes.

Step 2: Mix and Knead

1. After 30 minutes, add the salt, oregano, and the remaining 1.5 dl water.

2. Knead the ingredients together to form a soft, pliable dough. If it feels too dry, add water a tablespoon at a time.

3. Cover the dough and let it rise in a warm spot until it doubles in size, about 1–2 hours.

Step 3: Shape the Grissini

1. Preheat the oven to 220°C (428°F) and line a baking tray with baking paper.

2. Divide the dough into equal portions. Roll each portion into a thin stick, about 1 cm thick, and place them on the prepared tray.

Step 4: Add the Finishing Touch

1. Lightly brush the grissini with olive oil.

2. Sprinkle with salt and pepper for extra flavour.

3. Cover the tray with a cloth and let the grissini rise again for 30 minutes.

Step 5: Bake the Grissini

1. Bake the grissini in the middle of the preheated oven for 20-25 minutes, or until golden and crisp.

These crunchy, flavourful grissini are best enjoyed fresh, paired with cheese or alongside your favourite dips. They’re a perfect addition to any aperitif spread or as a thoughtful, homemade gift.
