Matcha Mango & Kiwi Chia Pudding

This matcha mango & kiwi chia pudding is a fantastic option for brunch, perfect for those with a sweet tooth, or as a light and refreshing dessert. The creamy texture of the chia seeds blends beautifully with the earthy matcha and the sweetness of fresh mango. Want it sweeter? Simply add more maple syrup to suit your taste!


Ingredients (Serves 4)

  • For the pudding:

    • 100 g chia seeds

    • 200 ml oat milk (or milk of choice)

    • 200 ml water

    • 2–3 tsp matcha powder (5–6 matcha spoons)

    • 2 tbsp maple syrup (adjust to taste)

    For topping:

    • 1 ripe mango, diced into small cubes

    • 1 fresh kiwi, diced into small cubes

    • 4 tsp coconut crumbles


INSTRUCTIONS

Step 1: Prepare the Chia Mixture

1. In a medium bowl, combine the chia seeds, oat milk, and water. Stir well to prevent clumps from forming.

2. Let the mixture sit for 10 minutes, stirring occasionally, until it begins to thicken.

Step 2: Make the Matcha Paste

1. Sift the matcha powder into a small bowl to remove lumps.

2. Add a small amount of hot water and whisk vigorously with a matcha whisk or small whisk until frothy and smooth.

Step 3: Combine and Sweeten

1. Add the prepared matcha paste and maple syrup to the chia seed mixture. Stir thoroughly to ensure the matcha is evenly incorporated.

2. Taste and adjust sweetness by adding more maple syrup if desired.

Step 4: Chill and Set

1. Divide the mixture evenly among 4 serving bowls or jars.

2. Cover and refrigerate for at least 6 hours or overnight to allow the chia seeds to fully absorb the liquid and form a pudding-like consistency.

Step 5: Add the Toppings

1. Before serving, sprinkle each bowl with coconut crumbles.

2. Top with fresh mango & kiwi cubes, spreading them evenly for a vibrant and sweet finish.
