Lemon-Pepper Polenta with Asparagus

Springtime means fresh asparagus, and what better way to celebrate than with a delicious and easy recipe for Lemon-Pepper Polenta with Asparagus? This dish combines the creamy richness of polenta with the bright, tangy flavour of lemon and the fresh, crisp taste of asparagus. Perfect for a light and flavourful meal, this recipe is sure to become a seasonal favourite! 🍋💚


Ingredients (Serves 4)

  • 300g Bramata polenta

  • 1.4L Water

  • 500g Asparagus

  • 40g Butter

  • 40g Parmesan cheese (freshly grated), I like to use Parmiggiano Reggiano as it’s very flavourful

  • 2 Lemons (zest from both, juice from one)

  • Salt & Pepper

  • Optional: Sprouts & Eggs


INSTRUCTIONS

1. Start the Polenta: In a large pot, heat a small amount of butter over medium heat. Add the lemon zest and freshly ground black pepper. Sauté for 2-3 minutes to extract the flavours.

2. Cook the Polenta: After the zest and pepper have released their aroma, add 1.4 Liter of water to the pot and bring to a boil. Gradually whisk in the 300g Bramata polenta. Reduce the heat to low and cook, stirring frequently, until the polenta is thick and creamy (about 30-40 minutes). Stir in the juice from one lemon, 40g of butter and 40g of Parmesan cheese. Season with salt to taste.

3. Prepare the Asparagus: While the polenta is cooking, trim the woody ends from the 500g of asparagus. Sauté the asparagus on medium heat and a little bit of olive oil for about 3-5 minutes or until tender and slightly golden. Set aside.

4. Optional Eggs: If you like, cook the eggs to your preferred doneness (poached, fried, or soft-boiled).

6. Assemble the Dish: Spoon the creamy lemon-pepper polenta onto plates. Arrange the asparagus on top. Add sprouts and eggs if using.
