Vegan & Gluten-free Buckwheat Crêpes
These simple, gluten-free buckwheat crêpes are made with just buckwheat flour, water, and a pinch of salt, yet they turn out perfectly thin, crispy on the edges, and full of rustic, nutty flavour. Whether you go savoury or sweet, they make for a nourishing and versatile meal—perfect for breakfast, lunch, or a cozy dinner.
Ingredients (Approx. 6 Crêpes)
150g buckwheat flour
300ml water
½ teaspoon salt
½ teaspoon olive oil or other plant oil for cooking
INSTRUCTIONS
Step 1: Prepare the Batter
1. In a bowl, whisk together the buckwheat flour, water, and salt until smooth and lump-free.
2. Let the batter rest for at least 20 minutes (or up to 2 hours) to allow the flour to absorb the liquid—this helps with optimal texture! If you are in a hurry it will also work without waiting.
Step 2: Cook the Crêpes
1. Heat a non-stick pan over medium heat and lightly grease with olive oil or sunflower oil if needed.
2. Pour a thin layer of batter into the pan, tilting it to spread evenly.
3. Cook for 1–2 minutes, until the edges start to lift. Flip carefully and cook for another 30 seconds.
4. Repeat with the remaining batter, stacking the crêpes as you go.
Step 3: Serve & Enjoy
1. For a savoury option: Fill with cheese, sautéed mushrooms, and spinach or top with a fried egg & avocado.
2. For a sweet version: Drizzle with maple syrup, add berries & yogurt, or go classic with butter & honey.
