Light & Healthy Beetroot Rösti (aka Hash Brown) with Goat Cheese & Arugula
Rösti (aka Hash Browns) is a beloved Swiss classic, but let’s be honest—it can be super heavy! As a Swiss local, I rarely order it at restaurants because the bacon, cheese, and eggs combo just puts me straight to sleep. So, here’s my lighter, fresher twist: a beetroot & potato Rösti that’s crispy, flavourful, and still gives you that comforting Swiss feeling—without the food coma!
Ingredients (Serves 1-2)
2 medium potatoes (raw), grated
2 medium beetroots (raw), grated
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon dried thyme
30g creamy goat cheese (or crumbled feta)
1 teaspoon capers
Handful of fresh arugula (rucola)
1 teaspoon olive oil & balsamic glaze
3 tablespoons cooked beluga lentils (optional, for extra plant protein)
INSTRUCTIONS
Step 1: Prepare the Rösti Mixture
1. Grate the potatoes and beetroot, then place them in a clean kitchen towel or kitchen paper. I used gloves to grate the beetroot as the colour is very intense and can easily stain on your hands. Also be careful not to wear anything white as it can splash while grating the beetroot. Just some practical tips :)
2. Squeeze out as much excess liquid as possible—this is key to getting a crispy Rösti!
3. Transfer to a bowl and mix in salt, pepper, and thyme.
Step 2: Cook the Rösti
1. Heat butter in a small non-stick pan over medium heat.
2. Add the Rösti mixture, press it down firmly with a spatula, and shape it into a compact circle.
3. Cover with a lid and cook for 10–15 minutes on one side, until golden and crispy.
4. Flip carefully, cover again, and cook for another 10–15 minutes.
Step 3: Assemble & Serve
1. Once crispy, transfer the Rösti to a plate.
2. Top with creamy goat cheese, capers, and fresh arugula. Optionally, if you want extra protein, add a scoop of boiled or crispy beluga lentils.
3. Drizzle olive oil and Balsamic glaze over it. Serve immediately & enjoy warm!
